Fermentation initiated in a small 4ton open-top Stainless tank. With limited quantities
of this grape from a single block of vineyard on the farm, it was handled carefully, and
fermented with a commercial yeast called. Pumpovers and manual punchdowns were
done regularily to maximize flavour extraction. Wine left on the skins after fermentation
This wine aged in oak for 26months; 40% new French oak barrels and the rest in 2nd
and 3rd fill barrels.
