Fermentation initiated in 10ton open-top stainless steel tanks, innoculated with a commercial yeast. Pumpovers and manual punchdowns with regular intervals were
done during fermentation to maximize flavour and colour extraction. This wine was left on its skins for an extended 21days after fermentation.
Straight to barrel from tank following fermentation. Aged in oak for 14months; 2nd, 3rd and 4th fill barrels.
