The wine has enough acid and grippy tannin to allow for bottle aging for a number year.

A harmonious and balanced full bodied wine with juicy red fruit, savoury smoked ham, crushed white pepper and aromatic wood aromas that follow to a well balanced wine with a long finish.
Grapes were sourced from vineyards owned by our shareholder pack members, Kasteelsig in Malmesbury, Southern Cross in Paarl Simondium and Devon Rocks in Stellenbosch Bottleray. Each site has different terroir bringing a different component to the wine. Vines are between 8 and 26 years old and yields are between 7 and 9 tons to the hectare.
The grapes were handpicked in February and March 2010 in small baskets and taken to our cellar where they were destalked and gently crushed. The bulk of the wine fermented in small open bins where it was hand punched 4 times a day. Both wild and commercial yeast have been used .The wine matured in French, Hungarian and US barrels. The wine was blended in February 2011 and bottled in September 2011. A small quantity of Pinotage (4%) has been blended with the wine. 12000 bottles have been produced.
