THE VINEYARD AND SOIL
This wine originates from one of the highest laying vineyards in the Breede River Valley halfway up the Langeberg Mountains behind the village of Ashton. This small Pinot Noir vineyard, clone 777, is rooted in Weathered Karoo shale and even in summer is sometimes covered in clouds. The grapes were harvested by hand in the cool early morning on 23 Feb 2015 and the grapes brought down to the farm.
After de stemming the berries, the mash received a cold maceration for five days at 8 eight degrees Centigrade, gently mixing it every day. The fermentation process was then started and halfway through pressed. After fermentation half the wine went into tank and the other half barrel. The blend was then bottled one year later.
